Ode to Simple Sauteed Mushrooms

There is really nothing like a simple sauteed vegetable. It is so easy to make, and there is a lot you can do with them- eat them alone, add to an egg scramble, fold into an omelet, top a sandwich or homemade pizza, mix into rice. The simple sauteed veggie has endless possibilities…

Today, I bought some mushrooms. Dropped a little bit of olive oil in the hot pan and just let them sizzle away until they were a nice golden brown. Sprinkled on a dash of salt and pepper. Heaven.

Later, I felt like a warm melt on this cold, rainy day. A slice of crusty bread in the pan with a thin layer of swiss cheese topped with a bit of leftover mushrooms. Heat the oven to 350 and let the open sandwich do its thing. Done in 5 minutes. Delicious.

I still have some left, so tomorrow morning it’s mini quiche cups in the morning, or maybe just a quick scrambled egg with mushrooms tossed in. Decisions…decisions…
