Accidental Ice Cream

I accidentally created this simple, healthy, delicious “ice cream”, and just had to share my creation with you to try! It’s naturally dairy-free but the creamy texture was amazing!

I was in the mood for something almond-coconut-chocolatey, so I took a 1/4 cup of raw almonds and put them in my magic bullet – they came out like powder, so I was going to sprinkle them on my Greek yogurt, but when my slippery hands dropped the yogurt on the floor, I just decided to be creative with what I had {sans the yogurt}.

So, I took a teaspoon of dark baker’s cocoa, a sprinkle of cinnamon, a 1/2 teaspoon of pure vanilla extract, 1/2 teaspoon of pure coconut extract, a tiny bit of raw sugar and mixed it up well. Then, I poured a 1/4 cup of Unsweetened Almond Milk into the mixture, and W-O-W!! It was so yummy, I decided to throw it in the freezer for a few minutes, and it came out tasting like ice cream!!!

Isn’t it fun when you stumble on something this tasty and simple with health benefits galore?! Check it out:

Raw Almonds: Not only a heart healthy nut, almonds are jam-packed with benefits that provide protection against diabetes, help counter foods high on the glycemic index, decrease blood fat, and are a god source of manganese, copper, and riboflavin to help with energy production.

Dark Baker’s Cocoa: Dark cocoa powder has flavanoids which have antioxidant, anti-inflammatory, antiviral properties. This powder protects us from illnesses caused by free radical damage. It also has been shown to enhance blood flow and lower blood pressure, and not to mention the “feel good” properties from the serotonin…it’s as if you’re in love!

Cinnamon: Aside from adding beautiful flavor to foods and beverages, cinnamon has been to shown to have antifungal and antibacterial properties, therefore helping with yeast and stomach ulcers. It has been known to help with the inflammation in our organs and tissues caused by many processed foods, and ultimately can aid in reducing our chances of heart disease and stroke. And, it helps with controlling blood sugar levels according to a Boston Globe Study. It has iron, fiber, and calcium, PLUS just the scent alone helps us boost memory.

Vanilla: Pure vanilla is a powerful antioxidant, shown to aid digestion, cures inflammation in body systems including respiratory, circulatory, digestive, nervous, and excretory system!

Almond Milk: This naturally non-dairy milk is rich in vitamin E, an antioxidant, that does not contain lactose so it is gentle on the tummy, and has little to no saturated fat!
